Simple Summer Fresh Fruit Pie

Ingredients
• 1 large package (0.6 ounces) sugar-free strawberry gelatin
• 2 cups boiling water (for gelatin)
• 1 large package (5.1 ounces) instant vanilla pudding mix
• 1-½ cups skim milk
• 2 large graham cracker crusts (9 ounces each), regular or chocolate
• 1 quart whole, cleaned, fresh strawberries
• 2 bananas, sliced
• 4 fresh peaches or nectarines, sliced into wedges
• 1 pint fresh blueberries, washed and drained

Directions
Three hours before serving or the night before, place gelatin in a medium bowl and add boiling water to dissolve. Do not add cold water as instructed on box. In a large bowl, mix together the pudding mix and milk with an electric mixer. Mixture will be thick. Add the dissolved gelatin and mix until smooth. Fill the crusts with the fruit in the order listed, placing creatively for attractive presentation. Pour half of the pudding mixture over each pie, allowing it to seep between each piece of fruit. Refrigerate pies until firm, or about 2 hours, and then serve.
