Breakfast In a Cookie

Best cookie recipe, fast breakfastEnjoy two breakfast cookies with a glass of milk or soymilk for a nutritious break- fast on the go. This recipe makes 60 cookies, so plan to freeze several servings for weeks of healthy options for breakfast, snacks, and dessert.

Ingredients

  • 1 cup dry, uncooked oat bran

  • 3/4 cup orange juice

  • 1 cup plus 1 tablespoon applesauce, unsweetened

  • 2 tablespoons canola oil

  • 1 cup honey

  • 1/3 cup firmly packed brown sugar

  • 3 large eggs

  • 1-1⁄2 tablespoons vanilla extract

  • 1 tablespoon grated orange rind or 2 teaspoons orange extract

  • 3 cups whole-wheat pastry flour*

  • 1 tablespoon baking powder

  • 1-1⁄2 teaspoons baking soda

  • 1 cup nonfat dry milk

  • 2-1⁄2 cups oats (quick-cooking or old-fashioned)

  • 1 cup nuts

  • 1 cup raisins

  • 1 cup ground flaxseed (optional)

*If you don’t have whole-wheat pastry flour, you can substitute with 1-1⁄2 cups whole-wheat flour and 1-1⁄2 cups all-purpose flour.

Directions

  1. Preheat oven to 375 degrees Fahrenheit. Position oven racks to accommodate two sheets at a time in the center of oven. Coat nonstick cookie sheets with cooking spray.

  2. Mix oat bran and orange juice together in a small bowl and set aside to soak for 10 minutes.

  3. Meanwhile, combine applesauce, canola oil, honey, brown sugar, eggs, vanilla, and grated orange rind or extract in a large bowl. Mix with an electric mixer until smooth.

  4. Measure flour, baking powder, and baking soda into a sifter and sift over applesauce mixture.

  5. Add the soaked oat bran and remaining ingredients to the large bowl and mix thoroughly with a strong wooden spoon.

  6. Drop slightly heaping tablespoons of the mixture one inch apart on cookie sheets. (To save time, fill cookie sheets with as many cookies as possible, baking two trays at a time. Stagger trays— one to the left and one to the right—to allow air circulation around each outer edge.)

  7. Bake until lightly browned—12 to 14 minutes.
